Winemaking notes: 60% of the grapes are harvested 2 months later than the rest, so they are partly dehydrated or raisined when they are picked. This process yields a more complex and rich fruit. Gentle punch-downs to ensure careful extraction of tannins, colour and aromas from the overripe grapes. The wine is partially aged in Premium American oak barrels for 8 months.

More about Viña Mayu
Viña Mayu is one of the modern wine pioneers of Elqui Valley, making premium wines from the region since 2005. It is a family enterprise owned by Mauro Olivier and the winemaker is Elqui’s most experienced winemaker, Giorgio Flessati.
Mauro was raised in Elqui valley and spent his summers working in the family fruit business, which led him into a lifetime career and passion for viticulture and wine. Mauro pioneered Carmenere and Syrah in the Elqui valley, which he planted in 2000.
This Carménère Appassimento is an intriguing wine with an Italian influence from Elqui Valley producer Mayu.
