A family business started by wine enthusiast and mechanical engineer Mario Giadorou in 1997, Dolium winery in Luján de Cuyo was one of the first subterranean wineries in South America. The architecture was ahead of its time in the late 90s, using the cooler temperatures underground for a stable environment for winemaking.

Today Ricardo Giadorou, second generation vigneron, runs the company making wine from vineyards in Lunlunta, Agrelo, Perdriel, and Chacras de Coria.
