Conjures up thoughts of red apple (baked and fresh!) and just baked brioche. There’s a complexity to the nose coming from lots of lees aging, but the fruit is still bright!

A complex mouth with fresh citrus notes and those lees-y notes as well as a direct minerality and a long lasting finish. Stylish indeed.

With French expertise and Patagonian quality, this is a win-win sparkling wine from Aquitania. Predominantly Pinot Noir with 40% Chardonnay (there’s another version with 60% Chardonnay and 40% Pinot Noir to try too!) the fruit comes from Malleco in the south of Chile, a cooler climate perfect for high acidity and a great potential for sparkling wines. The base wines are aged 4 months in French oak barrels, and then made sparkling by champenoise method with 24 months on the lees. Overseen by ex-Bollinger bubbly-maker, Ghislain de Montgolfier, and business associates Paul Pontallier (Château Margaux), Bruno Prats (former owner of Château Cos d’Estournel) and top Chilean winemaker Felipe de Solminihac, it is perhaps no surprise that this is one delicious bottles of bubbles. Less than 1000 bottles made.

Aquitania is a premium winery based in Alto Maipo with vineyards in Maipo and also deep south in Chilean Patagonia, in Malleco. The winery is a collaboration between four renowned wine folk from France and Chile: Paul Pontallier (Château Margaux), Ghislain de Montgolfier (former Bollinger), Bruno Prats (former owner of Château Cos d’Estournel) and Felipe de Solminihac (top Chilean winemaker).
