A medley of cassis & dark plum with peppery spice. If you’ve ever tasted Chilean Cabernet Sauvignon from Alto Maipo, this would be a classic expression of top quality Cabernet from the region.
Don’t let the sweet cassis in the nose fool you, this wine has bones. Smooth, but present, tannins with deep fruit concentration and the necessary acidity to pull you through to the long finish.
Barbecued meats and dark sauces with lean meats.

Silencio is the result of picking select Cabernet Sauvignon grapes from different sub-regions in Alto Maipo. Viña Cono Sur specializes in Pinot Noir but wanted to make an icon Cabernet Sauvignon to add to their portfolio and 2010 was the very first year. 2011 (tasted) was a spectacular Cabernet harvest for Maipo, and the results are present in the wine.

Cono Sur is based in Chimbarongo in the Colchagua Valley, Chile but make wines from many different valleys. They specialize in Pinot Noir, however, they have a strong portfolio of consistent wines that range from the economic – but great value – Bicicleta line through to their top varietal line 20 Barrels. Silencio is their top Cabernet Sauvignon, and Ocio is their prize Pinot Noir.
Cono Sur’s Pinot Noir project started in 1999, when it set the goal of producing the best Pinot Noir in Chile. The idea was to make a wine that was unique, expressive, and proud of its New World roots, while vinified using traditional techniques from Burgundy.
