This sparkling wine is very dry and fresh with fruity and savoury notes that linger on through the long finish.

This is the kind of wine you can open at a buffet meal or to go with a Mediterranean platter, as it will pair with just about anything savoury: cheese, salami and cured ham, smoked salmon, antipasti.

The grapes were direct-pressed, hence the pale colour. The wine spent 12 months on its lees prior to disgorgement. It was manually riddled. After disgorgement, no dosage was added and so the wine is bone dry.
