Clos des Fous, Dulcinea

Clos des Fous, Dulcinea Chardonnay. Making wine in the cooler region of Malleco would once have been seen as folly but results as accomplished as this Chardonnay prove that Malleco is worth its salt. Refreshing acidity and savoury mineral notes provide the cool baseline to the honey, straw and orchard fruit aromas that ride on top.

Lightly spun straw.

A combination of sweeter notes of honey, apple tart and nuts override savoury aromas of straw and crushed rocks.

This is a fantastically complex Chardonnay which delivers on the cool acidity typical from Malleco with a savoury almost saline finish that lasts for moments. There’s richness to this wine too, with an oiliness and full body that comes from 20 months ageing in barrel (in the Burgundian winemaking style that winemaker Francois Massoc is so well-known for).

 

Creamy seafood fettuccine: the acidity of the wine would cut through the creamy sauce and the oiliness of the wine would marry well with the silkiness of the pasta and fresh seafood flavours.

Dulcinea comes from Burgundy-trained Francois Massoc and his Clos of Madmen (Clos des Fous) who have made it their mission to make wines in some of the more interesting wine regions of Chile, hunting for the right terroir to make the right wine.
